Barley, oats, barley, wheat, chickpeas, lentils: we sow, we collect and transform all of our own produce. The pastas are made with flour or semolina produced by our carefully selected cereals. Our Jams and Extra Virgin Olive Oil are used exclusively in our farm restaurants.
From this year we also have 5 Cereals with T. Dicoccum Farro, Spelt einkorn; Oats; Barley; Durum Wheat; all produced on the farm.
All our raw materials are controlled, from the preparation of the seed, to the close attention at sowing time, to the exclusively mechanical processes before and after planting to control weeds. A significant help in Organic Agriculture are good agricultural practices, timely processing and rotations of cultures in the field.
The crops are processed on the farm in a complete supply chain process that goes precisely from the selection of their seeds, the reseeding and then to the finished product. The raw materials that come from our fields are subjected to visual checks, and organoleptic and analytical controls to ensure their undoubted quality.
The pearling and decortication of cereals are made directly on the farm to ensure that the products become as close as possible to the expectations of the final consumer. The products are then stored in special hygienically controlled warehouses.
